Some people might call this recipe “festive” or "Christmassy" because of the dried cranberries, and while that’s true, I don’t like labeling a single ingredient as something that’s only for certain times of the year. Personally, I enjoy this granola year-round, which is why I’m sharing it with you in March and not on Christmas.
This granola is a pantry staple for me—always there when I need it. And hey, I’ll roast a turkey in the middle of July without a second thought. Who cares if it's Christmas? Plus, cranberry sauce?! Have you ever had it on rice pudding? It's amazing, and I’ll eat that outside of the holidays, too. Therefore cranberries have a place in my home every single day.

What's in this granola recipe?
- Rolled Oats- They have a thicker texture that holds up better during baking in comparison to quick oats.
- Almonds- The almonds sweet and nutty taste compliments the tartness of the cranberries and creaminess of the chocolate.
- Dried Cranberries- Brings a nice contrast with the rich flavor of the white chocolate chips
- Shredded Coconut- Adds a subtle sweetness and a chewy texture
- Coconut Oil- Pairs well with the other ingredients, like the shredded coconut!
- Honey and Dark Brown Sugar- Creates a perfect balance of sweetness and texture
- Cinnamon- Adds a warm and cozy flavor
- Salt- Balances out the sweetness from the other ingredients
- Vanilla Extract- Enhances the overall flavor of the granola
- White Chocolate Chips- Well, this recipe wouldn't be white chocolate granola without them!

How do you make granola?
This homemade granola recipe is easy to make and you'll be so proud you made your own batch of granola instead of going to the grocery store for some.
- Preheat the oven to 325.
- Line a rimmed baking sheet with parchment paper and set it aside.
- In a large bowl add in the oats and chopped almonds. Mix and set it aside.
- In a small saucepan, on medium heat add in the coconut oil, brown sugar, cinnamon, and honey. Whisk until it comes to a boil. Once it comes to a boil, boil for 30 seconds and remove it from the heat.
- Stir in the salt and vanilla.
- Pour this over the oat mixture and mix until it is all coated. Make sure to scrape from the bottom while mixing. It may seem like there is not enough liquids but there is! Trust the process.
- Once mixed add it to the parchment-lined baking sheet in an even layer. We will be baking this for 30 minutes in total but in steps. Bake granola for 15 minutes then remove it from the oven and stir the granola.
- Add in the shredded coconut and stir again until evenly combined.
- Bake for 10 more minutes. Remove from the oven and mix once again. If the coconut is not toasted enough still, add it back to the oven for another 5 minutes. Once the granola is golden brown it is finished baking.
- Remove and place it on a wire rack to completely cool.
- Once its completely cooled, add in the dried cranberries and the white chocolate chips. If you add cranberries in during the baking time they will end up hard. If you add the chocolate before it cools the chocolate chips will melt.
- Store the granola in an air-tight container at room temperature once the granola cools completely.

What to do with this batch of granola?
- Serve it on ice cream
- Enjoy it for breakfast in a bowl of milk
- Put some in a mason jar and gift it to a friend, family member, teacher or neighbor
- Eat it on top of yogurt and fresh fruit, which is my favorite way
- You can also just eat in on its own as a snack, which is something I do. Honestly I eat white chocolate chips when I go to the pantry more often that I'd like to admit.
- Its perfect for quick snacks
Storage
Store it in an airtight container for up to 1-2 weeks. You can freeze it for up to 3 months as well. Store granola once it has cooled completely.

- Bake for 10 more minutes. Remove from the oven and mix once again. If you find the coconut is not toasted enough still, add it back to the oven for another 5 minutes, until golden
- Remove and place it on a wire rack to completely cool, it hardens once it cools.
- Once its completely cooled, add in the dried cranberries and the white chocolate chips.
- Store the granola in an air-tight container at room temperature once the granola cools completely for up to 1-2 weeks.
