Why did Jell-O become so popular?
A lot of people question why Jell-O was so popular in many recipes between the 1950s-1970's. I also questioned this and decided to do some research on my own.
Gelatin was once a dish mainly for the rich. It was eaten by the wealthy because it was very expensive and time consuming to make. Fast forward in time and now it is an easy dessert to put together!
In 1897 Jell-O was first trade marked. Though other things needed to come about for Jell-O to really sky rocket with interest, like more people owning a fridge.

Fridges Changed Everything!
Owning a fridge made Jell-O easier to make and enjoy. Once the fridge became more common, Jell-O became more accessible to the average person.
Having a fridge in the home only started to become popular in the late 1920s and in the 30s. About 1% of people in 1920 had a fridge, 8% of people had a fridge in the 1930's and by the 1950s almost 90% of homes had a fridge.
Therefore Jell-O consumption sky rocketed especially in the 1950s suburbs where it was seen as a sign of sophistication and status to have Jell-O. Now you can easily add this Jell-O recipe to your fridge as well.
People were making all sorts of Jell-O mold recipes with it. Some recipes included cabbage, celery, pasta, caviar, cream cheese and even lobster! ⅓ of the salad recipes in the average cookbook then were gelatin based!
Jell-O became so popular that Jell-O even came out with some interesting flavors, that are now discontinued which were:
Vegetable flavors
- celery
- Italian
- mixed vegetable
- seasoned tomato

Jell-O was something that was new and exciting. People went nuts when it became easily available. Women were able to make light delicate desserts to go along with their tea time. As you can see it is a pretty interesting part of our history!
Now recipes include cherry pie filling, cool whip, cottage cheese, tropical flavors, maraschino cherries, and instant pudding. The list goes on with the amount of recipes you can make with Jell-O and the ingredients you can add are endless!
