Easter Cadbury mini egg cookies with chocolate chips are a delicious holiday treat for the whole family. It is such a fun recipe to make with the kids! They get so excited opening up a bag of Cadbury mini eggs and seeing all the pretty colors about to go into the cookie dough batter. It is our favorite way to use up our mini eggs.
You can add these cookies to Easter baskets as well with some chocolate bunnies! Handing them their little baskets after they do their Easter egg hunt would be such a wonderful way to end all that excitement!

If you are looking for the perfect Easter cookie this Easter season this is the one! These cookies have crispy edges and a soft center with crunchy, chocolatey Cadbury egg pieces all throughout them.
This cookie recipe does not have to be chilled in the fridge before baking. You can quickly whip them up and start baking them right away! This means you can have these cookies in no time at all!

What ingredients are in Easter Cadbury Mini Egg Cookies with Chocolate Chips?
- All purpose flour- Provides structure, flavor and texture. I use unbleached flour in all of my recipes
- Baking soda- Baking soda helps the cookies rise and also helps the cookies to brown and have crispy edges
- Salt- Enhances the flavor and balances sweetness
- Unsalted butter- Helps to control the amount of salt in a recipe. It also adds richness and adds structure to the cookie dough
- Granulated sugar- White sugar creates a crispier cookie
- Light brown sugar- Brown sugar makes it soft and chewier. Brown sugar is also acidic which aids the baking soda when rising. The two different sugars allow the cookies to be both soft and chewy as well with that crispy edge. Its the best texture!
- Vanilla extract- Enhances the flavor of the cookie
- Large eggs- Eggs bind all the ingredients together
- Mini Cadbury eggs- I added mine to a freezer bag and smashed them a bit with a rolling pin, you can leave some whole as well
- Semi sweet chocolate chips- Adds some extra chocolatey flavor and you can never go wrong with that!


How to make Cadbury mini egg cookies?
- Add the Cadbury eggs to a freezer bag and smash them with a rolling pin to have all different sizes. You can also chop them up on a cutting board instead. Make sure to leave lots of big pieces as well. Set aside.
- Preheat the oven to 350. Line a cookie sheet with parchment paper and set it aside.
- In a medium bowl whisk the flour, baking soda and salt together. Set it aside.
- In a separate bowl add in the butter, granulated sugar and light brown sugar and cream butter and sugar together with your hand mixer.
- Add in the eggs and mix.
- Add in the vanilla and mix again.
- Sift the dry ingredients over the wet ingredients and mix together with your rubber spatula until just combined. Make sure to scrape the sides of the bowl.
- Add the Cadbury eggs onto the batter, even the little crumbs. Add in the chocolate chips. Fold into the batter.
- Measure 1-1.5 Tbsp. of cookie dough for each cookie, roll each into a ball and place 2 inches apart.
- Press each of the cookie dough balls down about half way.
- Place the cookies into the preheated oven and bake for 12-14 minutes. You'll know when they are done when the edges are slightly browned.
- Cool on the pan for 1-2 minutes then transfer the baked cookies to a wire rack to cool and then you can enjoy your Easter cookies!


When rolling the cookies into dough balls I make sure that the side with the most mini eggs showing are placed in the pan faced up. That way you can see the Cadbury eggs sticking out of the cookies more. You can also add some chopped pieces on top of them and press them into the cookies before baking.

How to store Easter Cadbury mini egg cookies with chocolate chips
Store these delicious cookies in an airtight container for up to 5 days once they have completely cooled.
Can you freeze mini egg cookies?
Yes, store them in a freezer bag or freezer safe container for up to 3 months. Just make sure to cool them completely before freezing them. I have mine currently sitting in the freezer now and ready to go for an Easter dessert for the holidays!
