Ingredients

  • 2 1/2 cups all purpose flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup light brown sugar
  • 1 tsp. vanilla extract
  • 2 large eggs
  • 1 1/2 cups mini eggs, smashed or chopped
  • 1/2 cup semi sweet chocolate chips

Instructions

  • Add the Cadbury eggs to a freezer bag and smash them with a rolling pin to have all different sizes or chop them up on a cutting board. Make sure to leave lots of big pieces as well. Set aside.
  • Preheat the oven to 350. Line a cookie sheet with parchment paper and set it aside.
  • In a medium bowl whisk the flour, baking soda and salt together. Set it aside.
  • In a separate bowl add in the butter, granulated sugar and light brown sugar and cream butter and sugar together with your hand mixer.
  • Add in the eggs and mix.
  • Add in the vanilla and mix again.
  • Sift the dry ingredients over the wet ingredients and mix together with your rubber spatula until just combined. Make sure to scrape the sides of the bowl.
  • Add the Cadbury eggs onto the batter, even the little crumbs. Add in the chocolate chips. Fold into the batter.
  • Measure 1-1.5 Tbsp. of cookie dough for each cookie, roll each into a ball and place 2 inches apart on the cookie sheet.
  • Press each of the cookie dough balls down about half way.
  • Place the cookies into the preheated oven and bake for 12-14 minutes. You'll know when they are done when the edges are slightly browned.
