Add the Cadbury eggs to a freezer bag and smash them with a rolling pin to have all different sizes or chop them up on a cutting board. Make sure to leave lots of big pieces as well. Set aside.
Preheat the oven to 350. Line a cookie sheet with parchment paper and set it aside.
In a medium bowl whisk the flour, baking soda and salt together. Set it aside.
In a separate bowl add in the butter, granulated sugar and light brown sugar and cream butter and sugar together with your hand mixer.
Add in the eggs and mix.
Add in the vanilla and mix again.
Sift the dry ingredients over the wet ingredients and mix together with your rubber spatula until just combined. Make sure to scrape the sides of the bowl.
Add the Cadbury eggs onto the batter, even the little crumbs. Add in the chocolate chips. Fold into the batter.
Measure 1-1.5 Tbsp. of cookie dough for each cookie, roll each into a ball and place 2 inches apart on the cookie sheet.
Press each of the cookie dough balls down about half way.
Place the cookies into the preheated oven and bake for 12-14 minutes. You'll know when they are done when the edges are slightly browned.
Cool on the pan for 1-2 minutes then transfer the baked cookies to a wire rack to cool and then you can enjoy your Easter cookies!
