Pre-heat oven to 350 and line a 8x8 metal baking pan with parchment paper. Set it aside.
In a large mixing bowl, add in the flour, baking powder and salt. Whisk and set it aside.
In a separate bowl, add the butter and the brown sugar. Mix.
Add the eggs into the bowl. Combine until smooth.
Stir in the vanilla.
Sift the dry ingredients over the wet ingredients.
Mix until just combined. Make sure not to over mix.
Fold in the white chocolate chips.
Add the batter to the pan. The batter is thick and will have to be smoothed out evenly. I do this with a rubber spatula or a large spoon. It will lift the parchment paper but just be patient and smooth out carefully.
Bake in the oven for 18-20 minutes, check at 18 minutes. You do not want to over bake them or they'll be dry.
Once the edges are slightly browned remove from the oven and place on a cooling rack to cool.
Once cooled slice them into bars.
Notes
Store in an airtight container at room temperature for up to 3 days. Can freeze for up to 3 months in a freezer bag.
Add 1/3 cup chopped walnuts or pecans along with the white chocolate chips if wanted.
