Simple Blondie Recipe Like Grandma Used to Make

Ingredients

  • 1 cup all purpose flour
  • 1/4 tsp. baking powder
  • 1/4 tsp. salt
  • 1/3 cup unsalted butter, melted
  • 3/4 cup light brown sugar, packed
  • 1 egg, room temperature
  • 1 egg yolk, room temperature
  • 1 tsp. vanilla extract
  • 1 cup white chocolate chips

Instructions

  • Pre-heat oven to 350 and line a 8x8 metal baking pan with parchment paper. Set it aside.
  • In a large mixing bowl, add in the flour, baking powder and salt. Whisk and set it aside. 
  • In a separate bowl, add the butter and the brown sugar. Mix.
  • Add the eggs into the bowl. Combine until smooth. 
  • Stir in the vanilla.
  • Sift the dry ingredients over the wet ingredients.
  • Mix until just combined. Make sure not to over mix. 
  • Fold in the white chocolate chips.
  • Add the batter to the pan. The batter is thick and will have to be smoothed out evenly. I do this with a rubber spatula or a large spoon. It will lift the parchment paper but just be patient and smooth out carefully.
  • Bake in the oven for 18-20 minutes, check at 18 minutes. You do not want to over bake them or they'll be dry.
  • Once the edges are slightly browned remove from the oven and place on a cooling rack to cool.
  • Once cooled slice them into bars.

Notes

  • Store in an airtight container at room temperature for up to 3 days. Can freeze for up to 3 months in a freezer bag.
  • Add 1/3 cup chopped walnuts or pecans along with the white chocolate chips if wanted.
