Pannukakku (Finnish Oven Baked Pancake Recipe)

A delicious oven baked pancake recipe

Ingredients

  • 1/4 cup unsalted butter
  • 4 large eggs
  • 2 Tbsp. white sugar
  • 2 cups whole milk
  • 1 cup all purpose flour
  • 1 tsp. vanilla extract
  • 8x11 glass baking dish

Instructions

  • Preheat oven to 400 f.
  • Add butter to baking dish.
  • Once the oven has preheated, place the dish into the oven. I leave it in the oven while doing the next steps. The butter should be melted and steaming hot when its ready to come out of the oven.
  • In a large bowl add the eggs, sugar and milk. Mix with the electric hand mixer for 1 minute.
  • Add the flour in and mix for 2 more minutes. 
  • Add the vanilla, mix until just combined.
  • Remove dish from the oven and spread the melted butter around the baking dish using a silicon brush. Make sure to coat the sides of the pan as well.
  • Pour batter into the pan.
  • Place it back into the oven making sure to use oven mitts as the baking pan will still be very hot. 
  • Bake for 35-40 minutes. It will turn a deep golden brown and the edges will become crispy while the middle remains custardy.
  • Cool for 5 minutes before slicing into squares.
  • Serve with maple syrup

Notes

  • The pancake will collapse as it cools which is totally normal!
  • Serve the pancakes warm, either plain or topped with your favorite pancake toppings like pure maple syrup or icing sugar, fresh berries and even a dollop of whip cream. It's also great with a side of fresh fruit.
  • Store in the fridge for up to 3 days.
