This Pannukakku (Finnish Oven Baked Pancake Recipe) is easy to make and it uses no leaving in the recipe! You’d think with how fluffy it becomes that there would be baking powder in there but there isn’t!

The ingredients involved in making it are likely things you already have on hand which makes it very convenient. You wont have have to go run to the grocery store!

Its so simple all you do is mix all the ingredients besides the butter in one bowl. Pour the batter into the baking dish, put it in the oven and allow it to bake into a custardy thick oven-baked pancake!

Ingredients in Finnish Pancakes

  • Unsalted butter- Using unsalted butter helps control the saltiness in the recipe and helps create those golden edges.
  • Large eggs-They are a key ingredient to achieving that custard middle that makes pannukakku unique, they provide structure and contributes to the light and puffy texture.
  • White sugar- A small amount of sugar sweetens the batter just enough without over powering it. Since its low in sugar you can add toppings like pure maple syrup and berries to sweeten it up a bit!
  • Whole milk- Whole milk is best as it creates a richer flavor.
  • All purpose flour- It gives the pancake structure without making it too dense.
  • Vanilla extract- Enhances the overall flavor while adding warmth.

Instructions

  • Preheat oven to 400 f, grab your 8×11 glass baking dish and add the unsalted butter to it. 
  • Once the oven has preheated, place the dish into the oven until the butter melts and gets nice and hot. I leave it in the oven the whole time while making the batter. This usually takes 8 minutes only!
  • In a large bowl add the eggs, sugar and milk. Mix with the electric hand mixer for 1 minute.
  • Add the flour in and mix for 2 minutes. 
  • Add the vanilla extract to the batter and mix until just combined.
  • Now that the butter has fully melted and is sizzling hot, remove it from the oven and spread the melted butter around the baking dish using a silicon brush. Make sure to coat the sides of the pan as well. This will help form those yummy crispy edges. 
  • Pour batter into the pan. The batter will be quite thin, but that’s part of the magic with Finnish pancakes, the texture will turn out perfectly!
  • Place it back into the preheated oven making sure to use oven mitts as the baking pan will still be very hot. 
  • Bake for 35-40 minutes. It will turn a deep golden brown and the edges will become crispy while the middle remains custardy. The custard middle is what makes this a perfect oven pancake. 
  • Once done carefully remove the dish from the oven and place it on a wire rack to cool for about 5 minutes before slicing into squares.
  • The pancake will collapse as it cools which is totally normal!
  • Serve the pancakes warm, either plain or topped with your favorite pancake toppings like pure maple syrup or icing sugar, fresh berries and even a dollop of whip cream. It’s also great with a side of fresh fruit, making this recipe a delightful breakfast option.

  • 2 Tbsp. white sugar
  • 2 cups whole milk
  • 1 cup all purpose flour
  • 1 tsp. vanilla extract

    1. I have never heard of Pannukakku. I like to make a Dutch Baby, which seems very similar. And it too is super delicious. I’ll have to try your recipe next time I make oven pancake. It sounds delicious!
