Saskatoon Berry Sauce
This easy Saskatoon berry sauce comes together quickly, is sweetened to perfection and is delicious served over pancakes or desserts.

This week my family and I visited the U-pick near us and picked a couple buckets of Saskatoon berries also known as Juneberries or service berries.
The kids had so much fun picking the berries they suggested we grow our own. I am pretty motivated now to plant some in our yard even though they’ll take a few years to produce.

They are a tasty summer berry the size of a blueberry but deep purple/blue in colour when ripe and are seedy and more meaty than a blueberry.
They taste great on their own, in pies, jams, in smoothies or with homemade yogurt and taste good in baked goods as well like in this blueberry breakfast cake recipe. You just replace the blueberries with these Saskatoon berries instead.

What to serve it with
- Top this creamy oatmeal with it
- On top of no churn vanilla ice cream
- Over pancakes, French toast and waffles or stuffed into crepes
- As a topping to a baked oven pancake
- Over homemade yogurt
- A topping for cheesecake or short cake
- In a yogurt parfait topped with simple granola
- On pork chops, along with the Thanksgiving turkey or with chicken

How to make this recipe

- Step 1: Add Saskatoon berries to a small pot with the sugar and water. Bring to a boil and boil for 5 minutes.

- Step 2: Whisk together the other portion of water with the corn starch and pour over the berries slowly while mixing and stir in the lemon juice.

- Step 3: Reduce heat and simmer until thickened, for about 15 minutes.

- Step 4: Remove from the heat and pour into a 500 ml mason jar. Allow to cool then place in the fridge to thicken or serve warm now.
Tip: If you want a less gelatinous sauce reduce cornstarch to 1 Tbsp. instead of using 2.

I store the Saskatoon berry sauce in a (500 ml) 16 oz Mason Jar
Storage
Store in an airtight container or mason jar in the fridge for up to one week or freeze in a freezer safe storage container or freezer bag once completely cooled then thaw in the fridge.

Saskatoon Berry Sauce
Ingredients
- 2 cups Saskatoon berries fresh or frozen
- 3/4 cup granulated sugar
- 1 cup water
- 2 Tbsp. cornstarch
- 2 Tbsp. cold water
- 1 Tbsp. fresh or bottled lemon juice
Instructions
- Add the Saskatoon berries, sugar and 1 cup of water to a small pot on medium heat.
- Bring to a boil, then boil for 5 minutes while stirring occasionally.
- Once boiled for 5 minutes, add the cornstarch and 2 Tablespoons of cold water to a small bowl and mix until combined.
- Slowly pour cornstarch mixture over the Saskatoon berry mixture while stirring.
- Stir in the lemon juice.
- Reduce heat to medium low and continue cooking for about 15 minutes, until thickened. Make sure to stir occasionally.
- Remove from the heat and pour into a 500 ml mason jar or cool slightly and transfer to an air tight container then place in the fridge to continue thickening, or serve warm.
