Maple Walnut Granola

A perfect breakfast for an autumn morning.

Ingredients

  • 4 cups old fashioned rolled oats
  • 1 cup walnuts, roughly chopped
  • 1/3 cup coconut oil
  • 1/3 cup pure maple syrup
  • 2 Tablespoons brown sugar
  • 1/4 teaspoon salt
  • 3/4 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 cup raisins, optional

Instructions

  • Pre-heat oven to 325.
  • Line a large baking sheet with parchment paper and set it aside.
  • Add oats and walnuts to a large bowl, mix and set aside.
  • In a small pot on medium heat add in the coconut oil, maple syrup, brown sugar, salt and cinnamon. Whisk until melted and sugar is dissolved.
  • Remove from the heat and stir in the vanilla.
  • Pour over the oats and walnuts and mix well.
  • Spread evenly over the baking sheet.
  • Bake for 15 minutes then mix. Bake for 15 more minutes and mix.
  • Bake for up to 5 minutes longer if needed, or until oats are browned.
  • Check the last couple of minutes to make sure oats don't burn.
  • Remove from the oven and place on a wire rack to cool completely.
  • Once cooled, stir in the raisins and add to an air tight storage container.

Notes

Store in an airtight container for up to 3 weeks at room temperature.
