Maple Walnut Granola

Ingredients

old fashioned rolled oats
1
cup
walnuts,
roughly chopped
1/3
cup
coconut oil
1/3
cup
pure maple syrup

brown sugar
1/4
teaspoon
salt
3/4
teaspoon
cinnamon
1
teaspoon
vanilla extract
1
cup
raisins,
optional
Instructions
Pre-heat oven to 325.
Line a large baking sheet with parchment paper and set it aside.
Add oats and walnuts to a large bowl, mix and set aside.
In a small pot on medium heat add in the coconut oil, maple syrup, brown sugar, salt and cinnamon. Whisk until melted and sugar is dissolved.
Remove from the heat and stir in the vanilla.
Pour over the oats and walnuts and mix well.
Spread evenly over the baking sheet.
Bake for 15 minutes then mix. Bake for 15 more minutes and mix.
Bake for up to 5 minutes longer if needed, or until oats are browned.
Check the last couple of minutes to make sure oats don't burn.
Remove from the oven and place on a wire rack to cool completely.
Once cooled, stir in the raisins and add to an air tight storage container.
Notes
Store in an airtight container for up to 3 weeks at room temperature.
