Impossible Coconut Pie Recipe (without bisquick)

Makes one 9 inch deep pie dish

Ingredients

  • 1/2 cup un-salted butter, melted
  • 1/2 cup all purpose flour
  • 1/4 tsp. baking powder
  • 4 large eggs, beaten
  • 1 cup granulated sugar
  • 1 tsp. vanilla extract
  • 2 cups whole milk
  • 1 1/4 cup shredded coconut

Instructions

  • Pre-heat oven to 350. Butter the pie dish with some of the melted butter and set aside
  • In a bowl add in the flour and baking powder. Whisk and set aside.
  • In a large bowl add in the eggs, beat.
  • Mix in the sugar then mix in the melted butter, and stir in the vanilla
  • Add in the flour mixture. Mix well.
  • Add in the milk and mix.
  • Add in the coconut and mix.
  • Pour all into pie dish.
  • Bake for 50-60 minutes (my oven takes 55 minutes), to tell it is finished the center will be set and golden brown. The pie will jiggle a bit and as it sets it will collapse a bit.
  • Place pie on cooling rack to completely cool then place it in the fridge for a few hours before serving.

Notes

Store in the fridge for up to 3-4 days.
