oatmeal raison cookies

Easy Oatmeal Raisin Cookies

A delicious comforting, chewy cookie

Ingredients

  • 1 1/2 cups all purpose flour
  • 1/4 tsp. salt
  • 1/2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 cup un-salted butter, room temperature
  • 2/3 cups light brown sugar
  • 2/3 cups granulated sugar
  • 2 large eggs
  • 1 tsp. vanilla extract
  • 2 cups quick oats
  • 1 1/2 cups raisins or semi sweet chocolate chips

Instructions

  • Pre heat your oven to 375.
  • Line a cookie sheet with parchment paper. Set aside.
  • In a large bowl, add in the flour, salt, baking soda, and cinnamon. Whisk and set aside.
  •  In another bowl, add in the butter, brown sugar, and granulated sugar and cream together. 
  • Now add in the eggs and mix. Stir in the vanilla.
  • Sift the dry ingredients over the wet. mix. 
  • Add in oats.
  • Fold in the raisins or chocolate chips.
  • Add to cookie sheets. 1 Tbsp per cookie. Spaced 2 inches apart.
  • Roll into a ball and press down only slightly, or cookies will end up flat.
  • Bake for 12-14 minutes, then leave in the pan for at least 1 minute before transferring them to a cooling rack.
