Cook Time 1 hour
Total Time 1 hour 10 minutes
Serving Size 6 cups

Ingredients

  • 6 cups quick oats or rolled oats, can also be a combination of both
  • 1/4-1/2 cup dark or light brown sugar packed
  • 1/2 cup pure maple syrup or honey
  • 1/4 cup coconut oil or vegetable oil
  • 1/4-1/2 tsp. salt
  • 1 tsp. vanilla extract
  • 3/4 tsp. cinnamon optional
  • *optional nuts, dried fruit, chocolate chips,

Instructions

  • Pre-heat your oven to 250 degrees and line a large baking sheet with parchment paper and set it aside.
  • Add oats to a large bowl and set them aside.
  • Add the brown sugar, maple syrup, salt and coconut oil to a small pot as well as the cinnamon if you're adding it. Place it on the stove on medium heat. Once it starts to come to a boil, boil for 30 seconds then remove it from the heat. Allow it to sit for 1 minute then add in the vanilla extract. Mix.
  • Pour wet mixture over the oats and mix until the oats are fully coated. If you want, you can add about a cup of chopped nuts now and mix well.
  • Place the oats onto the baking sheet and spread out evenly in the pan. Place in the oven and bake for 1 hour, making sure to mix the granola every 15 minutes.
  • Remove from the oven once lightly golden. It will harden as it cools.
  • Place pan on cooling rack and cool completely before storing and adding any dried fruits or chocolate chips

Notes

  • Store in an airtight container for up to 4 weeks once completely cooled.
  • You can toast the nuts along with the granola, but do not add the dried fruit or chocolate chips until it has completely cooled.
  • Granola will harden once it cools.
