Add the strawberries, honey and lemon juice to a small pot on medium heat. Stir occasionally and let the berries cook down until you are able to mash them .
Mash them in the pot and continue cooking until it thickens. This takes about 25 minutes, stir occasionally.
Reduce heat when needed, once thickened and most of the liquid is dissolved, remove the pot from the heat.
Add jam to a mason jar and cool slightly at room temperature then place it in the fridge to set and store for up to 10 days.
