Sour Cream Cucumber Salad

This sour cream cucumber salad is the perfect summer side dish to make for using up those fresh garden cucumbers. Its creamy, easy to make and uses simple ingredients.

My nana always made cucumber salads with every dinner during the summer months. She had a little garden in her back yard, just like I do now.

This cucumber salad is one of my families favorite side dishes along with broccoli salad. Any time either of these classic salads are on the table they are eaten up in no time!

Recipe Ingredients

  • Cucumbers- Thinly sliced and peeled.
  • Onions- You can use any type you’d prefer, though I used a yellow onion in this recipe but some prefer the red or white onions instead.
  • Sour Cream- I used full fat sour cream but you can use your preference.
  • Granulated Sugar- Adds just the right amount of sweetness.
  • White Vinegar- I used white vinegar but you can use lemon juice or apple cider vinegar if you prefer.
  • Salt & Pepper- Seasoned to taste.

How to make this recipe

  1. Step 1: Slice the cucumbers and onions. Place them in a medium sized bowl and set it aside.

  1. Step 2: In a small bowl combine the sour cream, sugar, vinegar, salt and pepper. Whisk until smooth.

  1. Step 3: Pour the dressing over the cucumbers and serve right away or set it in the fridge for up to an hour before serving.

Hint: The longer the cucumbers sit in the dressing the more the cucumbers will release their water. It is best served right away, but it’s still good the next day, the dressing will be thinner however.

Storage

Best served right away but you can store in an airtight container for up to 2-3 days. If there’s a lot of liquid over time, drain it off and add more sour cream.

These ingredients don’t stand up well to freezing.

Sour Cream Cucumber Salad

A delicious way to use up garden cucumbers

Serving Size 6

Ingredients

  • 2 medium cucumbers peeled and cut into thin slices
  • 1/2 cup thinly sliced yellow, white or red onions
  • 1/2 cup full fat sour cream
  • 1 Tablespoon granulated sugar
  • 1 Tablespoon white vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  • Slice cucumbers and onions then add them to a medium bowl. Set aside.
  • In a small bowl combine the sour cream, sugar, vinegar, salt and pepper, whisk well.
  • Pour the dressing over the onions and cucumbers and mix well. Serve right away or store in the fridge for an hour before serving.

Notes

Best served immediately. 
Store in an airtight container for up to 2-3 days. If too much water accumulates from the cucumbers, pour it off and add more sour cream before serving.
